Lemony Greek White Fish

At the beginning of this year, my mom asked if I would like to make fish every week as my dinner. (We take turns making dinner every week.) And I have made fish almost every week this year. Out of a couple dozen recipes, this easy, flavorful fish is my favorite preparation at the moment. The key is lemon zest! 

Ingredients:

1/4 cup extra-virgin olive oil

2 lbs cod. tilapia, or flounder filets

3 garlic cloves, minced

I tsp salt

I tablespoon fresh rosemary

I tablespoon fresh thyme zest of l lemon

I teaspoon dried oregano

I teaspoon coriander 1/8 teaspoon red pepper

Freshly ground black pepper

Directions: 

Preheat the oven to 375 F.

In a small bowl. whisk together the olive oil.. spices, salt, pepper, and lemon zest.

Pat filets dry. Brush the oil and spices on the fish. Bake uncovered for 10-12 minutes until fork tender.
